Marl's Organic recipe chicken tenders

Marl’s Organic – which has been operating out of a container in Al Bahar at the Corniche in Abu Dhabi since last year and is due to open the first cafe in Masdar City – has shared their recipe for almond meal coated Chicken Tenders. There are three cooking options here: fried, baked and, the owner’s personal favorite, preparing them using an air fryer.

Chicken Tenders

Ingredients:

500g of chicken breast cut into strips

1/2 cup of almond meal/flour

1/2 cup of semi-ground, gluten-free rolled oats

1/2 cup of gluten-free flour

2 tsp of oregano

1/4 tsp cayenne

1/4 tsp cajun spice

salt and pepper to taste

egg whites from 2 eggs

Coconut or avocado oil

Recipe:

Option 1: Fry up

1. Heat 4 tablespoons of coconut oil in a hollow fry pan

2. Set aside 3 bowls;

  Bowl 1: flour and cayenne mix

  Bowl 2: lightly whisked egg-white

  Bowl 3: mixed almond meal, oats, oregano, cajun spice and salt and pepper

3. Roll a strip of chicken in bowl 1 to remove any excess moisture; move it to bowl 2 to coat it with the egg whites; coat it in the bowl 3 mixture, making sure you roll it and cover it well.

4. Drop it in the heated oil and fry till color is golden

5. Repeat

Option 2: Baked

1. Preheat oven at 200°C, and prepare a baking tray with wax paper and brush or spray with coconut or avocado oil

2. Set aside 3 bowls;

  Bowl 1: flour and cayenne mix

  Bowl 2: lightly whisked egg white

  Bowl 3: mixed almond meal, oats, oregano, cajun spice and salt and pepper

3. Roll a strip of chicken in bowl 1 to remove any excess moisture; move it to bowl 2 to coat it with the egg whites; coat it in the bowl 3 mixture, making sure you roll it and cover it well.

4. Place it on the greased baking tin

5. Repeat till all chicken pieces are completed

6. Spray/drizzle top side with coconut/avocado oil

7. Reduce heat to 180°C and bake for 25 minutes

Option 3: Air fryer

1. Set aside 3 bowls

  Bowl 1: flour and cayenne mix

  Bowl 2: lightly whisked egg-white

  Bowl 3: mixed almond meal, oats, oregano, cajun spice and salt and pepper

2. Roll a strip of chicken in bowl 1 to remove any excess moisture; move it to bowl 2 to coat it with the egg whites; coat it in the bowl 3 mixture, making sure you roll it and cover it well.

3. Place it on a greased baking tin

5. Repeat until all chicken pieces are completed

6. Place baking tray in the freezer while you set up the air fryer

7. preheat the air-fryer at 200°C

8. Remove the baking tray from the fridge and place the tenders carefully into the airfryer

9. Set the air-fryer at 200°C for 20 minutes (

10. Press start and check on them at 10 minutes and at 18 minutes. Remove if golden brown, increase time if the tenders are not ready, until they are golden brown. The time varies from one air fryer to the other.
